Sourdough micro-bakery Rise Artisanal goes online

Pandemic hobby turns into a post-pandemic start-up offering healthy, fermented, and plant-based bread

[PHILIPPINES, July 2, 2022]—Rise Artisanal, a home-based sourdough micro-bakery based in Quezon City, Philippines, is now accepting orders on its recently launched website: riseartisanal.com. 

Customers may choose from a variety of sourdough loaves, such as the classic sourdough boule and focaccia, and fan favorites such as the sourdough garlic and herbs focaccia and the seeded pumpernickel boule. 

Rise Artisanal produces sourdough bread, which does not use fast-rising commercial yeast. Instead, it uses what is called a sourdough starter, a live culture that develops from the combination of water and high-protein flours. The starter has to be nurtured, and this is done by regularly feeding it with fresh flour and water. 

This is the traditional way of making bread - no artificial additives, no complex machinery. As the dough is folded and shaped (not kneaded), and allowed to sit overnight, lactic acid, prebiotics, and other bacteria originating from the starter mature during the long fermentation. This healthy sourdough process goes all the way back to 8000BC when ancient Egyptians first discovered leaven after mixing crushed grains with water by accident.

Rise Artisanal also sells desserts such as its popular Dutch Apple Pie on Sourdough Crust and its moist, reduced-sugar Sourdough Cookies. These treats are made from sourdough discard, which is the portion of the starter that is thrown out every time a starter is prepped for baking. This process of recycling sourdough is part of Rise Artisanal’s zero-waste business philosophy.
