Sourdough Banana Bread
Our sourdough banana bread offers a sophisticated zero-waste twist to a beloved classic.
To ensure moisture, we use pantry ingredients on their way to the garbage bin: 5 overripe bananas and sourdough discard. Sugar is regulated at half a cup because we want this dessert to derive its flavor from the fruit. Chunks of Belgian chocolate are mixed in prior to baking.
This bread comes in two forms: loaf (for personal enjoyment) and Bundt (for gifting). It keeps well and moist in the refrigerator for up to a week. Freeze to savor in the months to come.
Enjoy a warm slice with a smear of butter or pair with a cup of coffee.

This loaf keeps well at room temperature for 3 days (focaccia) and up to 5 days (boule) especially when stored in a linen cloth or bread bag. We do not recommend refrigeration as it goes stale there quickly. Instead, you may want to freeze the loaf to preserve it for up to 3 months. You may slice before freezing. When you are ready to enjoy it, just let the bread sit on the counter for about 30 minutes before toasting on high for 5-10 minutes.
