Learn to Bake Sourdough from Scratch: Rise Artisanal's First Workshop

We have been getting the same question for months: do you offer sourdough classes?

The answer is yes.

Rise Artisanal is hosting its first sourdough baking workshop at our home bakery in Quezon City, and we are locking in a date as soon as we hit four participants. We already have two.

What You'll Learn

This is a full-day, hands-on class. You will be right next to me - Mai - as I teach you how to care for your sourdough starter, while your hands are immersed in the dough. Don't worry, you will know what all the relevant bakery terms mean because I will send you a cheat sheet beforehand. 

We'll cover everything that actually matters in sourdough baking:

- Sourdough starter — how to build one, feed it, read it, and keep it alive at home. This is the foundation. Get this right and everything else follows.
- Bulk fermentation — understanding why timing changes everything, and how to work with your environment instead of against it
- Mixing and folding — the feel of good dough, what to look for, and when to stop
- Shaping and scoring — building structure, creating tension, and the basics of a good ear
- Baking — oven dynamics, steam, and how to get a proper crust at home

You'll leave with our complimentary classic boule, which you learned to make at every step, a starter that's ready to go home with you, and the knowledge to keep going. 

What's Included

Everything. ₱5,000 per participant, all in.

  • Full hands-on baking session from starter to finished loaf
  • Working lunch: healthy sandwiches and beverages plus a charcuterie spread featuring Rise Artisanal's own: granola, vegan pesto, sourdough crisps, and cookies. It's a proper introduction to what sourdough culture looks like on the table.
  • Essential tools: an apron, hairnet, a bread lame, dough and bench scraper, a sourdough glass jar, a banneton 
  • Reference materials: our sourdough recipe book, a starter care sheet, and a bake day schedule which you can use to document your progress; access to The Baker's Suite
  • A baked sourdough loaf - you reap what you sow :)
  • PLUS: Lifetime consult with Mai because good bread deserves to be baked in every home, and your questions shouldn't have an expiry date. Document your bakes, then run them by me. I will respond as soon as possible. 

What is The Baker's Suite?

The Baker's Suite is our home base for serious home bakers. Every workshop participant gets lifetime access. 

  • The Baker's Converter — a dedicated baking conversion tool for weight-based recipes, hydration percentages, and scaling loaves. No more doing the math yourself.
  • The Baker's Directory (in progress) - a directory of flour and baking suppliers, and artisan producers across the Philippines. Know where to source good flour.
  • The Baker's Budgeter (in progress) - a web app for managing inventory, sales, and expenses. This is just me scratching my own itch, but hoping that other small food business owners will find it useful. 

The Baker's Suite is built around one idea: once you start baking real bread, you don't stop. We want to make sure you have everything you need to keep going.

Sourdough is not a trend. It's an ancient way of making bread. A well-maintained starter is living, responsive, and yours. Feed it, use it, and it will outlast any commercial yeast you've ever bought.
