The philosophy

Bread is patient.
Teaching should be too.

I'm Mai, the baker behind Rise Artisanal. I've been making naturally leavened bread from this kitchen in Quezon City because I believe real bread — no shortcuts, no additives — is something everyone deserves to know how to make.

The Philippines is actually a perfect place for sourdough: our warmth accelerates fermentation beautifully. But most people never try because it seems intimidating. This workshop exists to change that.

Four students per session means I can watch every pair of hands. You'll leave not just with your own starter and a loaf, but with the understanding to do it again on your own.

Sourdough 101

Beginner

1 day · 7am – 2pm, up to 3pm in cool weather

Mix your first dough from scratch, meet your starter, learn the folds and fermentation that make sourdough what it is — and pull a real loaf from the oven before you go home. Lunch is included, and you leave with a full tool kit: apron, lame, banneton, scrapers, spatula, jar, bread bag and a scale, plus printed recipes, a bake day schedule and a glossary.

How it works

From sign-up to fresh loaf

    Reserve your spot

    Email or message me to claim a seat. A 50% deposit holds it, and I'll confirm your date once we have three.

  2. 02

    Come as you are

    Wear clothes you can flour. I provide aprons, every tool, and all ingredients.

  3. 03

    Bake together

    A full day of mixing, folding, shaping, and scoring — with my full attention on your dough.

  4. 04

    Take home bread

    Leave with your loaf, your starter, and enough knowledge to do it again solo.

Frequently asked

Questions

Do I need any prior baking experience?
None at all. The Sourdough 101 Workshop is designed specifically for complete beginners. If you can follow instructions, you can do this.
What equipment will I need at home?
Your home oven, a Dutch oven or a baking tray with aluminum foil. Everything else you need on the day is provided, and you go home with your own tool kit.
How many people are in each class?
Four students maximum. I keep it small deliberately — you deserve hands-on attention, not a demo you watch from across the room. Three confirms a class.
How do I book, and how do I pay?
Email info@riseartisanal.com or message @riseartisanal on Instagram. A 50% deposit reserves your seat and the balance is due on the day. I confirm the date once three people are booked.
Where is the workshop held?
In the Rise Artisanal studio in Quezon City. Full address is shared with enrolled students. Street parking is available nearby.
