Meet the troublemakers: Brown Butter Chocolate Chip, Dark Chocolate Chip and Rocky Road, and Oatmeal Raisin. Made from sourdough discard, they are moist, complex, and lower in sugar than your average cookie. Less guilt. More cookie.

Ingredients

Classic Sourdough Batard: whole wheat flour, bread flour, water, salt, sourdough starter. Six sourdough cookies - base: sourdough discard, all-purpose flour, brown sugar, butter compound (butterfat and vegetable oil), eggs, baking soda, salt, vanilla. By variant: cake flour, baking powder, cocoa powder, dark and semisweet chocolate chips; toasted walnuts and marshmallows (contain beef gelatine) in Rocky Road; rolled oats, raisins, cinnamon and coconut oil in Oatmeal Raisin. Contains: wheat, eggs, milk, tree nuts (walnuts, in Rocky Road). Rocky Road is not vegetarian - its marshmallows contain beef gelatine. Made in a home kitchen that also handles sesame.

Care information

This loaf keeps well at room temperature for 3 days (focaccia) and up to 5 days (boule) especially when stored in a linen cloth or bread bag. We do not recommend refrigeration as it goes stale there quickly. Instead, you may want to freeze the loaf to preserve it for up to 3 months. You may slice before freezing. When you are ready to enjoy it, just let the bread sit on the counter for about 30 minutes before toasting on high for 5-10 minutes.
